MY THANKS to Judith Whitworth, from Prizet, who sent in this delicious salad recipe.

Judith’s Very Green Salad.

Boil & cool a mug of frozen peas (or, to make a change, broad beans).

One large Little Gem lettuce chopped finely (or 2 small).

One inch of the green ends of spring onions, chopped finely.

2 avocados, scooped roughly.

2 kiwi fruits peeled & sliced.

2 tablespoons of green pumpkin seeds.

A dash of olive oil & lemon juice.

Salt & black pepper to taste.

Optional - one clove of garlic, crushed.

Mix, toss, enjoy!
