MY THANKS to Judith Whitworth, from Prizet, who sent in this delicious salad recipe.

Her recipe serves four people. If you have a recipe you would like to see published in Food & Drink, or here on the web, then simply drop me a line at The Westmorland Gazette, 1 Wainwright’s Yard, Kendal, LA9 4DP, or email me at gillian.cowburn@kendal.newsquest.co.uk.

One inch of the green ends of spring onions, chopped finely.

2 avocados, scooped roughly.
