Question:

I'm a more savoury person but would like to be more creative in the pudding department. Any ideas?

I'd make use of some super summer berries and make a summer pudding. To make the summer pudding you need some berries. About 750g washed berries, raspberries, blackberries, strawberries, blueberries, blackcurrants will make a great pudding. If you can pick some blackberries for free, even better. Place the berries into a pan with 190g sugar and cook for about 8 minutes over a medium heat. Remove from heat. Add a few shredded fresh basil leaves and a little squeeze of lemon juice. Cover and allow to steep for a few hours. Line a one litre pudding basin with cling film. Remove the crust from a loaf of medium sliced bread, then cut a circle of bread to fit the bottom of the bowl. Dip one side of the bread into the fruits and place juice side down into the bottom of the bowl. Cut the rest of the bread into large triangles. Dip each triangle into the berry juice and line your bowl, overlapping each slice. Drain your berries and then put them into your lined bowl. Cover with the remaining bread. Cover with cling film, put the bowl on a plate and place a saucer to fit inside the bowl and then place a weight on top. Leave in the fridge for 24 hours. Remove from bowl, portion and serve with some clotted cream - and a glass of chilled Prosecco!
