Can chef recommend a recipe for a hearty stew or casserole that will feed the whole family?

Macaroni cheese has become trendy again, I remember eating some awful variations when I was at school with over cooked pasta and lumpy, bland sauce! To feed 4 people, cook 400g of macaroni pasta in plenty of boiling, salted water. Take care to cook the pasta "al dente", it should still have a little bite! place 700ml of whole milk in a clean pan, add 1/2 peeled onion studded with 4 cloves. Bring to the boil, switch off hest and allow to infuse for 20 minutes. In another saucepan, melt 50g unsalted butter, add 50g of plain flour, stir and allow to cook for four minutes, mix well and don't allow to burn. Slowly add the onion infused milk, whisking frequently, until all the milk has been added. Season with salt and pepper and cook out over a low heat for about five minutes. Add 80g of grated cheddar cheese and remove from the heat. Place the pasta in a large bowl, add your cheese sauce and mix well. Place the pasta into a large buttered oven proof dish, add another 80g of grated cheddar cheese and 50g of Parmesan cheese over the top of the pasts. Bake at 200*C for about 25 minutes or until golden brown and bubbling.
