What dish would be best to introduce someone to prawns? And not prawn cocktail!
Jess Elliot, Carnforth
Prawns are a tasty addition to many hot dishes and salads. I think something such as a pasta dish with some prawns would work well. Finely slice 2 cloves of fresh garlic and finely dice 1 peeled onion. Add 50ml good quality olive oil to a large frying pan and place over a medium heat, add the sliced garlic and gently shake you pan to cook the garlic, but don't let it colour. Add the diced onion and cook for a further 5 minutes. Add a few splashes of white wine, reduce by half, then add a good handful of prawns, I would rather use some of the larger tiger prawns rather than the smaller type of prawns. Add your cooked pasta and if you can find it, some lovely wild garlic. Toss your pasta together, season with salt and pepper. Place in bowls, dribble with some more olive oil and sprinkle with a little freshly grated parmesan cheese.
