Browned off with her old career, Jude switched to scrumptiousness

Jude Sykes, of Kentrigg, has made her dreams come true setting up the Lakeland Brownie Company, which she operates from her own kitchen.

Formerly in personnel, Jude has always loved baking and now wishes she had acted on her passion sooner.

She said: “It is the most empowered thing I have ever done. I find baking very therapeutic, and I have met some lovely people so far, who have been really helpful and supportive.”

The brownies, which come in indulgent flavours such as triple chocolate, white chocolate, pistachio and cardamom, espresso, and peanut butter swirl, were inspired by the 54-year-old’s trip to America.

“I spent time in Boston visiting family, and the brownies there were fudgey. When I got home I tried to make a batch and kept going until I found the perfect recipe, which produced rich and moist brownies with a creamy centre. I have then worked on this and just kept experimenting with new flavours,” said Jude.

“My immediate family have tasted so many that I think they are getting fed up with brownies, so I am trying to get feedback from others now.” Although they are a luxury, all the goods are available gluten free, and come without preservatives or additives.

“At events I kept getting asked for gluten-free, and some people were disappointed when I initially could only provide them with certain flavours. This is why I now use gluten free flour in all my recipes, and I really think it enhances the quality and the flavour of the brownies,” said Jude.

“They are handcrafted to order daily, and delivered fresh within hours of the oven, and they are made in small batches so as not to compromise the flavour,” she added.

Jude is hoping to provide brownies for weddings, corporate events, hotels and to even put together hampers. She can also be found at events and markets around the county.
