SOUTH Lakes eateries have made their way onto the culinary map in a downloadable national cookbook.

The Punch Bowl Inn & Restaurant in Crosthwaite, Kirkby Lonsdale's Hipping Hall and Gillam's in Ulverston all feature in the Great British Cookbook which showcases 200 recipes by inspiring local chefs, with proceeds going to charity.

For every £12 book download, £10 will be split equally between Macmillan Cancer Support and Hospitality Action.

“We’re delighted to be involved in the Great British Cookbook along with so many respected chefs, and supporting two great causes who offer a remarkable and much needed service in the industry and community," said Richard Rose, owner of the Punch Bowl Inn.

The team behind the book spent two years searching the length and breadth of the UK for talented chefs to take part and the finished masterpiece takes the reader on a journey through 200 of the UK’s most prestigious pubs, hotels, Michelin star and AA rosette restaurants.

In Crosthwaite, Punch Bowl Inn head chef Scott Fairweather created a gluten free Lyth Valley Damson Soufflé with Damson Ripple ice cream.

And for Hipping Hall there is a recipe for Cartmel Valley hare with celeriac and rainbow chard while Gillam's shows off its pan fried polenta with butter bean and smoked paprika pate topped with balsamic cherry tomatoes.

As well as a host of starters, mains and desserts from 10 regions, the book includes contributions from the likes of celebrity chefs Rick Stein OBE, Aiden Byrne, and Nigella Lawson.

A special Download and Donate Day is scheduled for Friday (December 19).

Mr Rose added: “We’re hoping that people across Cumbria will do their bit to help the book reach its 20,000-download target to raise £200,000 for the charities as well as enjoying trying out some of the fantastic recipes at home for friends and loved ones over the festive period.”
