SALMON does dry out if it gets over cooked, so you need to be careful with cooking times. Another way of keeping moisture in your fish, is to bake it in foil in an oven, or even on the barbecue.

For four people, buy 4, 150g skin on, but scaled salmon portions. You will also need about 4 handfuls of cooked green beans, 2 lemons, olive oil and a jar of good quality green pesto. Lay out a half a metre strip of aluminium foil and drizzle with some olive oil. Lay out 1 handful of cooked green beans, top with a piece of the salmon, skin side down, squeeze over the juice of half a lemon and top with a spoonful of green pesto. Season with salt and pepper and an extra drizzle of olive oil. Fold the aluminium foil into a nice parcel, ensuring it is sealed all around. Place the four finished salmon parcels on a baking sheet and cook at 200C for about 20 minutes. Remove from oven, leave to stand and then carefully unwrap and lift onto a plate. Serve with some steamed new potatoes and a green salad.
