A SUCCESSFUL restaurateur is branching out into the world of olives and relishes – and he already has thousands of orders on the books.


David Farraday, 44, was planning on relaxing after selling his Bowness-based Postilion Restaurant in July, only to be made an offer he could not refuse.


Shortly after creating Farraday’s Tasty Olives and Farraday’s Tomato and Pineapple Relish, David went on a family holiday to recharge his batteries – but then a German gourmet food supplier placed an initial order of 14,000 jars of his olives. 


As he was abroad he couldn’t fulfil the order but within days of returning, David had sent the company, called Foodist, a sample of his Tasty Relish and they promptly asked for 13,000 jars. 


Now, the Farraday’s Tasty brand has been growing rapidly since, and can be found stocked at the Bowness Deli, Bowness Post Office, The Brown Horse of Winster, The Hole in t’ Wall, The Village Inn, KD's Cafe, Hyltons, both the Windermere and Ambleside Wine Stores and Stockghyll Fine Foods.

Higginsons Butchers in Grange-over-Sands are also stocking the products and next year they will also be featured in the Lakeland stores.


It is also stocked by Edinburgh-based gourmet food box company Flavourly, made famous by their appearance on the BBC show Dragons Den. 


Farraday's Tasty is also in communication with two major Airlines to use their products in their First class and Business class cabins.


What makes the products so popular is their unique flavour combinations – the olives are pitted to allow the fresh herbs and spices to be absorbed into the fruit, giving them a sweeter taste, and the relish came about after experimentation revealed that pineapple, garlic and tomato worked well together. 


Fennel seed and fresh coriander, as well as cubes of fruit, ensure the relish’s taste and texture works well on the palate.


David is already talking of bringing out some new, exciting flavours – he is currently working on wasabi and mango mayonnaise, which he says is a Hot Java Lava mango chutney.


“I like to try and include each component of flavour – sweetness, sourness, saltiness, bitterness – into each mouthful,” said David, who is embracing his new business with real ‘relish’ after being in the restaurant trade for 22 years.


He said: “It’s exciting now because it’s something different  that I have found to get my teeth into rather than the mundane routine.

"It gives me more of a drive because I’ve got to get this brand out there.”
