A NEW business has launched in the Lake District offering bespoke designed cakes for all celebrations.

Sherbet Cakes has been set up in Staveley by the village's Emma Wright to provide unusual and creative flavour combinations alongside conventional celebration cakes.

“I have made celebration cakes for family, friends and local charities for a number of years and it’s something I’m really passionate about," said Emma. "Putting together a cake design for someone’s special event which really captures the spirit of that person is an absolute privilege.”

Emma is currently working to develop a Tastes of Lakeland special tiered cake for weddings or big celebrations.

“For me, although the decoration has to be spectacular and will be the thing that creates that initial 'wow' factor, it always needs to be underpinned by amazing tasting cake," said Emma. "I love traditional flavours like chocolate, vanilla and fruitcake; but people nowadays are often looking for something more special and unique.”

Emma has worked to develop some cake recipes which capture traditional Lakeland flavours, and will be offering a special Tastes of Lakeland selection of cakes. These include sticky toffee cake, flavoured with dates and a muscovado drizzle, sandwiched with toffee sauce and vanilla buttercream; damson gin cake, infused with damsons and a gin drizzle and sandwiched with damson conserve and vanilla buttercream; spiced ginger cake, flavoured with ginger and a muscovado drizzle and served with passion fruit curd and vanilla buttercream and rum nicky cake, flavoured with stem ginger, apples, dates and spiced rum and covered in marzipan.

“I find the rich food heritage of this area inspirational, and they’re the sort of flavours which I personally love and which can work really well together,” she said. “I’m thrilled to say that even though I’m only just starting out, my diary is already filling up with commissions ."
