A GRILLED cheese business that has taken Barrow by storm is due to expand as it moves from the market to a dedicated shop.

GRILLa Cheese, which has been in business since October last year, has submitted plans to turn a town centre unit into one premises to showcase its host of grilled cheese delights.

Proposals for a new store in Dalkeith Street, at the site of the former Simply Pleasure and more recently Dapper stores, have been submitted to council bosses.

And owners hope to open the new shop in the middle of July if plans are approved.

Co-owner Malcolm Lingard said he wanted the shop to open on more days rather than be restricted to the limited trading hours at the market.

He said: “We’ve loved being a part of the market community and will leave there with a heavy heart.

“But we can only open on the days the market is and it’s got to the point where we have hit a ceiling.

“We especially want to open on Sundays, because frankly it’s an abomination that hungover people currently can’t buy one of our grilled cheeses.”

Mr Lingard said the market stall’s four members of staff would all transfer over to the new store and hinted that more would be recruited if the business continues to be successful, with new workers possibly being drawn from service users at the nearby Project Hub for young people.

He said the shop unit would not require any structural work, meaning the new store could be up and running by July 13.

Customers will be able to pick from an expanded menu, with ‘four or five’ new sandwiches, as well as free delivery on offer for the first month.

Despite being situated close to the pubs and clubs of Cavendish Street, the shop would not target Barrow's night-time economy to begin with, Mr Lingard said.

“We want to be good neighbours and run a successful and stable business before we target people coming out of the pubs and clubs," he said.

GRILLa Cheese has applied to planners to be allowed to open until 3am at weekends but would not be trading at those times until potentially further down the line.
