A COUPLE with Cumbrian roots have drawn on their campervan adventures to compile a cookbook of travel-friendly recipes.

Megan Winter-Barker, originally from Kendal, and Simon Fielding, from Grasmere, are the duo behind The Clever Camper Cookbook.

"The book came about in a funny kind of way," Megan said. "We went travelling in our van and kept saying we could create a recipe book because we both loved food and we cooked a lot in the van."

Megan then had to design a book as part of the publishing course she was doing at the University of Central Lancashire in Preston.

"Then I got a job at a publishing house and they said they wanted to publish it," the 26-year-old explained.

Inspired by a two month-long trip through Europe in their campervan named 'Pip', the book is filled with simple meals that take into account the limitations of a van.

"We like to cook so we made quite a lot of meals in the van because we were on a budget," Megan said. "There's a lot less space in a campervan. We had a tiny little fridge, we had to use up ingredients before we could get new things. We had a grill and some hobs so that helped but hopefully most of the recipes in the book you could do on a stove top."

Included in the selection of recipes is one-pot Mexican poached eggs with chorizo, Spanish meatballs, satay chicken and sticky salmon with egg fried rice.

There is also a shopping list and a list of useful equipment that the couple found handy to have while travelling.

Although they now live in London, the couple used to call Ambleside home and the town is where Simon's family runs The Apple Pie Cafe and Bakery.

They will be returning to the eatery on March 24 to celebrate the launch of the book and people are invited to drop in between 3-9.30pm.

The Clever Camper Cookbook is published on March 13 and is available to pre-order on Amazon and Waterstones now.
