A great dessert using pears

Pears are a really versatile fruit and can be used in both savoury and sweet dishes. One of my favourite ways with pears is to have them simply roasted with some vanilla and stem ginger, then
served with some whipped cream or ice cream. For four people, peel four comice pears and cut in half from top to bottom. With a small knife or a teaspoon cut out the little core and seeds in the
centre. In a heavy wide bottomed saucepan, place 400g of caster sugar and place over a medium heat, add 150ml water and start to make a light caramel. Add the pears face down in a single layer, you
might need to make it in 2 batches then add 50g diced butter, a little vanilla extract and 25g chopped stem ginger. Place the saucepan in the oven and cook for approx 15 minutes or until nicely
caramelised. Be really careful as it will be very hot. Remove the pears from the pan, add 50 ml water to thin down the caramel. Spoon the ginger syrup over the pears and serve with some softly
whipped cream.
