Does chef have a favourite mushroom dish that I could serve as a main for six people?

Have you ever tried shitake mushrooms? They are an oriental mushroom but have a fairly meaty texture and are great in stir fries. Blanch 3 heads of broccoli, cut into florets, for about 3 minutes or until just cooked, add 3 packs of ready for wok medium noodles. Drain and set aside. Heat 100ml of sesame oil in a large wok or frying pan, add 500g thickly sliced shitake mushrooms, fry for 3-4 minutes, add 3 cloves finely crushed garlic and 4 finely diced, fresh red chillies. Fry for 1 minute and then add the noodles and the broccoli. Add 100ml hoisin sauce, 50ml sesame oil and a large splash of water, cook for a further 1 minute. Finish with some shredded spring onions, a few crushed cashew nuts and a good sprinkle of chopped coriander. If you can’t find shitake mushrooms, use a mix of oyster mushrooms and chestnut mushrooms.
