Let's start with some salads. Make a coleslaw but use red cabbage instead of white cabbage and add some dried cranberries to the mix, with new potato salad, dressed with some grain mustard, chopped chives and olive oil.
Also use shredded iceberg lettuce and wild rocket mixed together, and then make a feta cheese and roasted vegetable frittata, a courgette and basil quiche.
Buy some good quality loaves of bread, we have some great bakers in Kendal – serve the bread with some sun-dried tomato tapenade and butter.
For some main course items, make a butternut squash and chick pea curry, served with some brown rice, and a pepper and courgette lasagne. Peel some flat mushrooms, remove the stalks, top with mozzarella cheese and some bail leaves, then bake in the oven.
Cut some aubergines in half lengthwise, drizzle with olive oil, then bake for 15 minutes, scoop out the flesh, mix with some cooked cous cous, chopped coriander, ground cumin and some crushed garlic. Place back into the aubergine skins and reheat back through the oven.
For dessert, make a good fruit salad, flavour with passion fruit syrup. Make a banana bread, serve with some warm custard. You could also do a lovely cheeseboard with some fantastic Cumbrian cheeses and a good local chutney.
