Mackerel is a great fish and one we should be eating more often.

It's fairly sustainable because it is pretty fast growing.

As with any fish, check with your fishmonger about the provenance of the fish - try to see it comes from sustainable stocks.

As mackerel is classed as an oily fish you should avoid an oily sauce; fruit tends to work well with mackerel. Try making a lovely fresh tomato salsa.

Take 5 nice ripe plum tomatoes, remove the seeds and roughly chop the flesh, peel and finely chop 1 small red onion, 1 deseeded red chilli, a few leaves of coriander and mix together in a bowl.

Season with salt and pepper. Then add the juice of 1 lime and a few little drops of honey.

Grill your fresh mackerel fillets and serve with the tomato salsa and some crusty bread.
