Do you have a recipe for a spicy sauce for a seafood dish?

  • My preferred method for cooking fish is grilling and I always tend to serve some type of salsa with it.

If you looking for something spicy then I would suggest making a mango and chilli salsa.

Peel and finely diced one ripe mango, the riper the better, and place in a mixing bowl.

Finely dice half a peeled red onion and finely chop a small handful of fresh coriander leaves; add to the diced mango.

Peel, deseed and dice one plum tomato and finely crush one small clove of garlic. Add to the mango and mix well.

Carefully deseed and finely dice two medium sized red chillis and add to the mango, making sure you wash your hands after chopping the chilli.

Season the salsa with salt, pepper and the juice of one lime.

Finely add a little drizzle of maple syrup to give a little sweetness, give and good stir and allow to rest for two hours before serving.

Simply grill your chosen fish, getting a nice crispy skin and serve the salsa straight on the top.
