YVONNE Cosler is a girl who wants to go places and, having met this human dynamo, I sincerely hope she gets there.

The former law student arrived on these shores from Germany with Cumbrian-born husband-to-be Stuart less than three years ago.

And yet, in that short time, she has not only managed to establish a successful guesthouse; train as a Weight Watchers leader (she is now diamond' rated and runs classes in Windermere and Grange-over-Sands); and join the Lake District Business Women Network, but Yvonne has also just launched a new venture, The Lite House, supplying low-fat lunch boxes to the hungry but health-conscious.

"Even me, as a person who loves cooking and preparing food, finds it sometimes a struggle to make time for myself and have a nutritious meal. So I came up with the idea of The Lite House'," explained Yvonne.

"It delivers tasty, balanced low-fat packed lunches to your place of work. The menu, which is printed on recycled paper, presents all the facts you need to make the food choice which is right for you."

Perhaps a bowl of carrot and coriander soup, for example, smoked mackerel and pasta bean salad with seasonal leaves and coleslaw with orange and soy dressing, or spicy turkey and couscous salad, possibly followed by a slice of almond and apricot sponge cake?

All presented in bio-degradable lunch boxes, of course.

Yvonne's target groups are people who work on the outskirts of town and office staff - "people who are sitting the whole day so they have to be careful about what they eat."
